Bacon and Cheddar Quiche


6 eggs

6 oz bacon (half of a package)

1 cup half and half

½ tsp kosher salt

½ teaspoon of freshly cracked pepper

1/8 teaspoon baking powder

1 ½ cups freshly shredded cheddar cheese

1 9-inch pie crust (make your own or store bought)

Cook bacon according to instructions.  Drain on paper towels and set aside. Preheat oven to 375 degrees.  Arrange dough onto pie plate.  Prick it with a fork over several areas to minimize bubbles.  When heated, bake pie crust in pie plate for 8 minutes.  In the meantime, combine eggs, half and half, salt, pepper and baking powder in a bowl and whisk until well mixed.  Remove the pie crust from oven.  Crumble the bacon and distribute onto the bottom of the crust along with the shredded cheddar.  Pour the egg mixture over it.  Bake it for approximately 35-40 minutes.  When it’s done, remove and let sit for an hour or so before serving.
